Madeleines with honey (and jam)

Preparation time: 10 minutes (+ rest 1 hour)
Cooking time: 8-9 minutes

INGREDIENTS 

For 9 madeleines

  • 1 egg
  • 50g flour
  • 60g of sugar
  • 50g cooled melted butter
  • 1 tablespoon L'Épicurien honey of your choice ( Chestnut , Acacia , etc.)
  • L'Épicurien jam if you want to stuff the madeleines ( Mirabelle , White Fig , etc.)
  • 1 teaspoon baking powder


        PREPARATION

        Beat the egg and sugar in a bowl until the mixture becomes frothy. Add flour and baking soda, mix.

        Add the butter, then the honey.

        Cover the bowl of dough with a kitchen towel and let it rest for at least an hour.

        Preheat the oven to 220°C.

        Fill buttered madeleine molds three-quarters full and place a teaspoon of jam in the center, if desired.

        Bake for 4 minutes, then lower the thermostat to 200°C and continue cooking for another 4-5 minutes.

        Leave to cool before tasting.

        Keeps very well in an airtight container.
